Rianki Podder
Ingredients:
1. Chicken boneless: 500 gms
2. lemon juice- 6-7 table spoon
3. ginger-1 inch-paste
4. garlic-3-4 cubes-paste
5. red chilli-6-8 pieces
6. onions-3[cut into small pieces]
7. black pepper-4-6pieces
8. coriander powder-1 teaspoon
9. cumin powder-1 teaspoon
10. cinnamon-2 long pieces
11. white oil
12. salt
13. kashmiri mirch powder
14. sugar
Procedure:
Wash the chicken pieces and marinate with salt and lemon juice while you make the paste to marinate. To make the paste put 6-8 red chillies, 5-6 black pepper, and corriender powder 1 teaspoon, 2 long pieces of cinnamon, cumin powder 1 teaspoon, 2-3 table spoon of lemon juice in the mixer and blend it into a smooth paste.[If needed just to make the paste properly you can put a bit of water to make it smoother] Now take half of the paste and mix the chicken properly with it and marinate for at least 5-6 hours in the freezer. After the marination is done, take out the chicken from the freezer, put white oil in a pan, when the oil is hot enough, put the ginger and garlic paste in the oil, stir for a few moments then put the onions in the pan and fry until its brown. Once the onions are brown enough, put the other half of the paste and fry until oil comes out from the mixture. Put a bit of sugar, just a pinch of Kashmiri mirch powder to give the colour, salt just a bit because the chicken is already marinated with salt, now stir for a while and put the chicken in the pan along with all the marination. Now just wait for the chicken to get fried, stir it well, cover the pan and put it on low flame for a few minutes, check the softness of the chicken and when you feel its soft enough take it out of the pan and serve it hot with roti or chapatti or paratha.
